As summer ’17 takes a back seat, I thought it would be nice to look back at the last few busy (but great) months.
Starting with no other than my birthday aka Memorial Day weekend. I’ve always considered this holiday as the start of summer. For this year, we did a short road trip to St. Louis, MO where we visited a handful of local breweries, ate our first “naughty” ice cream at Clementine’s Naughty and Nice Creamery (highly recommend!!), and attended our first St. Louis Cardinals game.
Two weeks later, I jumped on a plane and headed to beautiful Palm Springs, CA for no other than my Bachelorette Party. And what a weekend!! This was everything and anything I could’ve asked for. My girls really outdid it and it’s always a great time when we are all together. There were many opportunities for yummy foods during this trip, but the highlight of it all? POLE DANCING.
This was sooo much fun and HARD! Very hard. My advice? Bring long socks, have fun, and be ready to be hurting in places you didn’t think you could.
Following this food/alcohol coma weekend, Pablo and I went to Boulevardia. We attended our first Boulevardia last year and had so much fun, we had to go back this year. If you are ever in KC and like beer, festivals, and food, I highly recommend it. You get to drink different beers, try food from a bunch of local food trucks, shop from local stores, and enjoy live music. (TIP: get the VIP package — worth the price)
At the end of June, I got to check off another thing from my bucket list: Ed Sheeran’s concert. It was sooo awesome to see him live 🙂
Then for Fourth of July — Pablo, Luna, and I drove the 8 hours to Chicago and spent the holiday with our friends. This was not our first time in the windy city, more like our 5th or 6th? We love this city and always have so much fun when we are there. This time we explored THE BEST burger (ever!) from Au Cheval, BBQ from Green St. Smoked Meats, deep dish pizza, and some much needed sun tanning at Chicago’s “beach.”
At the end of July, I traveled to Roatan, Honduras for a work conference. And wow, this place is simply gorgeous!
The conference lasted a whole week, but on the last day we got to do a little exploration tour. We saw dolphins, starfishes, and even did some snorkeling. And the best part? All for just $20 (yes, twenty dollars) beers included too! – Bargain or what? 🙂
After coming back from my work trip, Pablo’s coworker invited us to eat some delicious homemade Vietnamese Food. And OH.MY.GAAWD. I forgot how good Vietnamese food is. This evening definitely took me down memory lane to our own Vietnam trip at the beginning of this year.
A couple weeks later, we attended the Kansas City Ethnic Enrichment Festival. This was such a wonderful experience and I was very surprised and excited to hear that KC hosted this annually. It is such a great opportunity for everyone to experience and taste different cultures and cuisines. My only advice? Bring cash!! We were definitely not prepared and it was very hard to decide what we would spend our $30 on because we wanted EVERYTHING!
In hindsight that was probably a good thing we didn’t get to overeat because a couple of weeks after we became MR & MRS! ♡ WooHoo!
Everything was PERFECT. We are SO blessed to have had all of our closest friends and family traveled from far to share this special day with us. And as anyone who lives in KC knows, if you have out of towners, the MUST thing to do is…. BBQ! So you can only image how much BBQ was consumed in the span of 3 days!! #BBQForDays
The weekend after our wedding was Labor Day, and both Pablo and I had a 4 day weekend. So as a mini-honeymoon, we decided to head over to no other than Chicago (told you we love this city!). This time around we had: Halal Guys, Do-Rite Donuts, Gordo’s Homemade Ice Cream Bars, Nandos, and Rubi’s Tacos at Maxwell Street Market.
Oh and we finally made it to our very first CUBS game! #buckelist
As you can see, these past few months have been crazy non-stop, but I wouldn’t have it any other way. And now that summer is over, I’m looking forward to see what fall/winter ’17 has in store for us. So far we have a Denver trip in September, Spain in October, Florida in November, and I’m sure as the Holidays approach more things will come up.
Until then, I’ll be enjoying getting back to normal and giving my body (and my liver) the cleanse it needs, while also working on new recipes, and of course looking forward to football season 😉
