This Banana Bread recipe is gluten free, dairy free, grain free, refined sugar free (pretty much BS free), and SO EASY to make! I’ve made multiple “healthy” banana bread recipes and I always come back to this one. It comes out perfect Every.Single.Time.
It is made using Simple Mills Banana Bread Mix and before you start rolling your eyes and saying “How is this a recipe?” Just hear me out…
The Simple Mills Banana Bread Mix is simply used as the base for this banana bread recipe. Look at it as a way to cut corners and save time in the kitchen by not having to measure any flour and sugar ratio.

The key to this banana bread is what you add to the mix.
I’m not talking about the usual eggs, milk, and oil. That’s just the basic. I’m talking about taking it up a notch by adding real bananas, chia seeds, cinnamon, and a few more ingredients to create this incredibly satisfying healthy banana bread that is perfectly moist, the right amount of sweet, and full of banana (and chocolate) flavor. Yum!
You can call it cheating (or whatever) but after all I did say this was an easy recipe and it doesn’t get easier than that, plus you can prepare the entire thing in one bowl (who doesn’t love less clean up?).
WHAT DO YOU NEED?
- Simple Mills Banana Bread & Muffin Mix – I love this brand because the ingredients are so clean – only 8 ingredients! I admit it is a little pricey, but you are paying for good ingredients and convenience.
- Eggs – The box calls for 3 large eggs, but I’ve noticed it works out better with 2 large eggs instead. If you want to make it vegan, you could use flax or chia eggs, but I haven’t tried it so let me know if you do.
- Nut milk – I prefer cashew or almond milk, but you can use any milk. Water even works if you have no milk.
- Coconut oil – I’ve only used coconut oil and olive oil. I prefer coconut oil (no, you can’t taste it), but any oil should work.
- Ripe bananas – The box already has bananas as an ingredient, but I like adding real bananas to this mix as it helps add more moisture, sweetness and the extra banana flavor.
- Collagen Peptides – (optional) I use Vital Proteins collagen peptides in my coffee every morning and I try to add it to my baking too. It’s an easy way to add extra protein and amino acids without ruining the flavor or texture. (Do not sub with whey protein)
- Dark Chocolate chips – (not optional) This one is non negotiable. There’s no banana bread without some chocolate. For dairy free option I like to use Enjoy Life chocolate chips.
- Chia seeds – This adds extra fiber and a great source of omega 3 fatty acids (and no, you can’t even tell they are there)
- Walnuts – (optional) they add a crunch to every bite. Walnuts are my preferred nuts for banana bread but you can use pecans, or almonds.
- Vanilla Extract
- Cinnamon

My Go To Banana Bread
Ingredients
Wet Ingredients
- 2 ripe bananas
- 2 eggs
- 1 tsp vanilla extract
- 1 oz coconut oil (melted)
- ½ cup nut milk
Dry Ingredients
- 1 box Simple Mills Banana Bread Mix
- 2 tbsp chia seeds
- 1 tbsp cinnamon
- 1/4 cup chocolate chips
- 1/4 cup walnuts (optional)
- 2 scoops Collagen Peptide (optional)
Instructions
- Pre heat oven at 350F.
- Smash bananas in a large bowl.
- Add the rest of the wet ingredients and mix well.
- Slowly add all the dry ingredients (except the chocolate chips) to the wet ingredients.
- Once the batter is mixed well, fold in the chocolate chips.
- Pour the batter to a greased loaf tin (or use parchment paper to avoid sticking).
- Bake for 30 minutes and then cover with foil and bake for another 20-25 mins.
- Let it cool for 10-15 minutes before slicing.
