Crispy Smash Potatoes
Forget about mashed potatoes and say hello to you new favorite potato dish. They are deliciously soft and tender on the inside yet incredibly crisp on the outside.

- 12 oz baby potatoes (assorted or yellow potatoes)
- 2 tbsp butter (melted)
- 2 cloves garlic (finely chopped)
Seasonings:
- 1/2 tsp rosemary (fresh or dried)
- 1/2 tsp thyme (fresh or dried)
- 1/2 tsp onion powder
- salt and pepper to taste
Pre heat oven at 400F.
Boil potatoes for 20-25 minutes (until tender).
Drain the potatoes and let them cool for 2 minutes.
Lay them onto a baking sheet lined with parchment paper.
Gently press down on each potato using a fork or the bottom of a cup.
Mix melted butter with fresh chopped garlic.
Drizzle each smashed potato with the butter mix and sprinkle the seasonings on top.
Bake for 25-30 minutes until the edges are crisp and golden.
